Only made in a few thousand bottles per vintage, this sparkling wine made with Bianchetta Trevigiana grapes grown in the Asolo DOCG appellation area, is a Prosecco col Fondo akas Cloudy Prosecco . For a sparkling wine to be called Prosecco, according to the DOC/DOCG regulation, the wine must be made with Glera grapes cultivated in the prosecco area. The Bianchetta trevigiana was one of the grapes allowed in the production of the famous sparkling wine before the wine become a protected denomination.
Made following the "ancestrale" method, the ancient method developed by the Romans, this sparkling wine is produced fermenting the juice with its own yeast first in barriques and then steel tanks. After the fermentation, the wine goes through a maturation of 5 months in the tank followed by at least another 9 months in the bottle. Only then, it is released without the “dégorgement”, leaving the yeasts in the bottle, giving the wine a more complex nose and making it cloudy.
This is a fantastic Prosecco col Fondo, cloudy, light, dry, refreshing with a nose of apple, thymus and wild herbs, delicate, elegant. Before serving the prosecco, allow the wine to settle in the bottle for an hour or so. This sparkling wine is the perfect accompaniment for cold cuts and appetizers.
