Abundant in polyphenols, this extra virgin olive oil is made exclusively from Frantoio olives harvested from centuries-old trees that have stood beside the Certosa di Padula for generations. These ancient trees, revered for their age and heritage, have been recognized as a Slow Food Presidium "Olivi Secolari" (century-old olive trees). The oil is cold pressed in a top of the range mill.
This is a light fruity oil, where the bitterness characteristic of the variety is perceived progressively, pleasant, in balance with the spiciness with an excellent overall balance. The Frantoio is an oil that pairs well flavorful dishes such as grilled meat.
The man represented in the label is Prior Damiano Festini, who made our Certosa great in 1583, drawing done by a local young artist.
