Terruas Cannonau di Sardegna DOC Riserva is a flagship wine produced only in exceptional vintages and in extremely limited quantities. This meticulously crafted Riserva embodies the essence of Cannonau, Sardinia's renowned native red grape.
Grapes are hand-harvested in early September, ensuring optimal ripeness and quality. To preserve delicate aromas, the harvest occurs in the cool morning hours. The winemaking process involves a unique blend: 85% destemmed and crushed grapes, and 15% whole cluster fermentation. Following fermentation, the wine matures for six months in French oak barrels, undergoing malolactic fermentation. It then refines for an additional 12 months in cement tanks.
Terruas Cannonau Riserva presents an austere yet elegant bouquet, featuring notes of rich cherry jam, black cherries, and plums in alcohol, complemented by floral hints of wallflower and hyacinth. Spicy nuances of black pepper, nutmeg, and leather intertwine with balsamic notes of pine. On the palate, the wine begins with a soft entry, gradually revealing silky tannins that envelop the mouth with a long, persistent finish leaving a lasting impression.
This structured and complex Cannonau Riserva is reserved for the most special moments. It pairs exquisitely with dishes such as liver terrine, spelt tagliatelle with hare ragù, or guinea fowl stew with Taggiasca olives and pine nuts.
