A white wine obtained from Vermentino grapes grown in the Elba island, partially fermented in barrique, this Elba Vermentino DOC has an elegant and intense fruity nose with a smooth sip reminding of the island is from. It goes well with the best Mediterranean cuisine.
In this Elba Vermentino DOC the grapes ferment partly together with their skins, partly in French oak barriques and partly in steel. The grapes, selected on the plant, are destemmed and left to macerate in a press for a short time; after soft pressing, the free-run must is cold decanted into steel tanks and then fermented in steel at a controlled temperature between 16 and 18°C and in barriques. Approximately 10% of the grapes are fermented in contact with the skins to add complexity and structure to the wine.
This Elba Vermentino DOC goes fantastically well with elaborate fish first courses, shellfish, fish tartare or baked, stewed, with gourmet second courses that look out to the sea and with white meats.
