Why we love it

An exceptional depth and complexity, a meticulously crafted Bovale Riserva that stands as a benchmark for this distinctive Sardinian grape. This wine showcases the true potential of Bovale, a variety known for its robust tannins, vibrant acidity, and remarkable structure, yet often overlooked.

Bovale Riserva Su' Nico undergoes a rigorous aging process, spending twelve months in first and second passage French oak barriques. This careful maturation imparts nuanced oak character, while preserving the inherent qualities of the Bovale grape. Following its time in oak, the wine is further refined in glass, allowing its complex aromas and flavors to harmoniously integrate.

The nose of Su' Nico reveals an intense and evolving bouquet, where notes of rich cherry jam and decadent black cherries in alcohol intertwine with delicate spices and fragrant potpourri. On the palate, this Bovale Riserva is warm, balanced, and remarkably smooth. Lively acidity and elegant tannins create a velvety texture, while its full body and persistent finish leave a lasting impression.

Su' Nico's exceptional structure and softness make it an ideal companion for a range of sophisticated dishes. Elevate your dining experience by pairing it with aged Pecorino di Sardegna DOP, allowing the wine's robust character to complement the cheese's complexity. It also shines alongside hearty game dishes like wild boar stew, or rich pasta creations such as pappardelle with duck ragù, enhanced by the earthy elegance of black truffle. Alternatively, enjoy Bovale Riserva Su' Nico as a meditation wine, allowing its intricate layers to unfold sip after sip.
